Chunky 15-Minute Apple Sauce
December 6 2020
Apple sauce is my favorite way to top potato latkes, so at this time of the year, with all the gorgeous apples available and such an EASY recipe, I'm destined to make my chunky 15-minute apple sauce.
You heard me: 15 minutes!
Just peel, core and chop those crisp apples and add sugar, lemon juice, cinnamon and water. Then all it takes is 10 minutes in the microwave, a little mashy-mashy, and TA DA...easy, quick delicious apple sauce!
Makes: 2 cups
Prep Time: 5 minutes Cook Time: 10 minutes
Total Time: 15 minutes
2 Macintosh apples
2 Granny Smith apples
1 cup water
Juice of 1/2 lemon
1/2 cup sugar
1/2 tsp cinnamon
Peel, halve and core all apples. Cut into 1-inch chunks. Combine apples, water, and lemon juice in deep microwave-safe 3-quart bowl.
Toss sugar and cinnamon together in a small bowl, and stir into apple mixture.
Cook uncovered for 5 minutes on high in microwave. Stir, pressing apples into liquid and then cook for 5 more minutes. Using a potato masher, coarsely mash apples, stirring them into liquid.
Cool to room temperature, then cover and refrigerate. Eat within one week.
