I love keeping parties and holiday gatherings as simple as I can! The less stress I have on the day of the event, the better for this Fancy Pants chef! The bar is an area that I want to make as self-serve as possible, and when you've got a lovely punch like this, it's just easy!
This punch starts with a thyme syrup. It can be made in advance, which is perfect when planning for parties. The flavors: dark rum, apple cider and thyme are all reminiscent of Autumn, Thanksgiving and parties! This drink won't knock you off your socks...it's refreshing and light. It's the perfect starter to an evening of heavy eating!
This cocktail can be made ahead, from the thyme syrup that can be made a month ahead, to the mixing of the punch that can be done up to four hours ahead. Leave some club soda on the bar, maybe a little sign that explains to top off their drink with the soda, and you don't have to step foot near the bar! You can now attend to all the other crazy Thanksgiving or party needs!
New England Express
Makes 8 servings
1/3 cup sugar
8 sprigs thyme
2 cups apple cider
1½ cups dark rum
¾ cup fresh lime juice
1 tspAngostura bitters
8 sprigs thyme
8 lime slices
Bring sugar and 1/3 cup water to a boil in a small saucepan, stirring to dissolve sugar. Remove from heat, add thyme sprigs, and cover. Let stand 10 minutes, then strain into a small jar. Let cool.
Mix thyme syrup, cider, rum, lime juice, and bitters in a pitcher. Divide among rocks glasses filled with ice; top off with club soda. Garnish with thyme sprigs and lime slices.
Thyme syrup can be made 1 month ahead. Cover and chill.
